Method
Brown and sauté
- Brown the ground beef in a large pot and drain the fat.
- Sauté the onion for 3 minutes, then add the garlic and cook for 1 minute.
Build the cheesy soup base
- Add the beef broth, condensed cheddar cheese soup, Worcestershire sauce, mustard powder, and garlic powder, then bring the mixture to a boil.
- Add the elbow macaroni and cook for 8-10 minutes until tender.
Finish and serve
- Reduce the heat and stir in the heavy cream until smooth.
- Stir in the shredded cheddar until fully melted and the soup turns thick and glossy.
- Season with salt and pepper to taste, then serve with pickles, green onions, and extra cheddar.
Notes
For the thickest texture, keep the soup at a gentle simmer after adding the macaroni and stir often as it cooks so the pasta doesn’t stick. Store leftovers in the refrigerator up to 4 days; reheat on the stove over low heat, adding a splash of beef broth or cream if it thickens too much. Freezing isn’t recommended because pasta and cream can change texture. If you want a lighter option, use evaporated milk or half-and-half instead of heavy cream for a similar creamy finish.
