  • 0.25 cup honey or maple syrup
  • 0.25 cup coconut oil, melted
  • 0.5 cup unsweetened applesauce
  • 1 tsp vanilla extract

Method
 

Prep the oven and pan
  1. Preheat the oven to 350°F and line a 12-cup muffin tin with liners or grease well.
Mix the dry ingredients
  1. Whisk whole wheat flour, all-purpose flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
Mix the wet ingredients
  1. In a separate bowl, beat eggs, honey, melted coconut oil, applesauce, and vanilla until smooth.
Combine batter
  1. Add wet ingredients to dry and stir until just combined to avoid overmixing.
Add zucchini
  1. Fold in grated zucchini gently until evenly distributed so you don’t deflate the batter.
Fill and bake
  1. Divide batter among the muffin cups, filling each about ¾ full.
Bake
  1. Bake for 18–20 minutes at 350°F until a toothpick inserted in the center comes out clean.
Cool
  1. Cool for 5 minutes in the pan so the muffins set slightly, then transfer to a wire rack.

Notes

For the best tender crumb, squeeze the grated zucchini dry until it feels lighter before folding it in—this prevents soggy muffins. Store in an airtight container in the refrigerator for up to 4 days or freeze up to 2 months. For a lower-sugar version, use maple syrup in place of honey only if your brand is truly low-sugar, or reduce the sweetener by 1–2 tbsp without changing bake time.
