Ingredients

ice cream sandwiches
  • 24 rectangular ice cream sandwiches Use classic chocolate cookie-style sandwiches so the layers hold their shape.
whipped topping
  • 2 tubs (8 oz each) whipped topping (Cool Whip) Keep thawing to a minimum; spread straight from the package for best texture.
hot fudge
  • 1 cup hot fudge sauce Warm slightly if needed so it drizzles in thin ribbons.
caramel sauce
  • 0.5 cup caramel sauce Drizzle in the same amount as the hot fudge to balance flavor in each slice.
decorations
  • Rainbow sprinkles Optional but recommended for a festive top layer and color contrast.
  • Oreo crumbles Optional but recommended for a cookies-and-cream crunch on top.

Equipment

  • 1 sheet pan

Method

Layer the cake
  1. Arrange a single layer of rectangular ice cream sandwiches in a 9x13 pan.
  2. Spread half the whipped topping over the sandwiches, smoothing to the edges so the layer is even.
  3. Drizzle half the hot fudge sauce and half the caramel sauce over the whipped topping in thin ribbons.
  4. Arrange a second layer of rectangular ice cream sandwiches on top, pressing lightly to help it set.
  5. Spread the remaining whipped topping to cover completely, creating an even top surface.
  6. Drizzle the remaining hot fudge sauce and caramel sauce on top, then decorate with rainbow sprinkles and Oreo crumbles.
Freeze and slice
  1. Freeze at least 6 hours or overnight before slicing, until firm enough to cut clean wedges with visible layers.

Notes

For the cleanest slices, dip your knife in warm water and wipe between cuts—so the whipped topping and fudge don’t smear. Store covered in the freezer for up to 2 weeks; freeze is yes. A simple dietary swap is using reduced-fat whipped topping if you want a lighter option while keeping the same layered method.
