  • 3 cup corn kernels Fresh or frozen.
  • 6 bacon Diced into strips.
  • 1 onion Diced.
  • 3 celery Diced stalks.
  • 3 garlic Minced cloves.
  • 4 cup chicken or vegetable broth Use whichever you prefer.
  • 1.5 cup heavy cream For creamy texture.
  • 2 tbsp all-purpose flour For thickening.
  • 1 tsp smoked paprika Smoky flavor.
  • 0.5 tsp cayenne A little heat.
  • green onions For serving.
  • sour cream For serving.
  • oyster crackers For serving.
  • salt To taste.
  • black pepper To taste.

Equipment

  • 1 Dutch oven

Method

Cook bacon and aromatics
  1. Cook the bacon in a Dutch oven over medium heat until crispy, then remove and leave 2 tablespoons fat in the pot.
  2. Sauté the onion and celery in the bacon fat for 4 minutes, then add the garlic, smoked paprika, and cayenne and cook for 1 minute.
Thicken the chowder
  1. Whisk in the flour, then gradually add the broth until smooth.
  2. Add the sweet potatoes and simmer for 15 minutes, or until tender.
  3. Stir in the corn and heavy cream, then simmer for 8 minutes.
Finish and serve
  1. Partially blend the chowder for a thicker texture, then season with salt and black pepper to taste.
  2. Serve topped with bacon, green onions, and sour cream, with oyster crackers on the side.

Notes

For the thickest texture without going fully smooth, blend only a portion of the chowder (or pulse briefly) before seasoning. Refrigerate in an airtight container for up to 4 days; reheat gently on the stove, adding a splash of broth or cream if needed. Freezing is not recommended because the cream can break; for a lighter option, swap heavy cream with half-and-half for a thinner result.
